I’m loving these fresh, crunchy, filling salads. This one will take me to about 3pm I’m guessing.

It’s just:

  • one carrot, cut into strips
  • one zucchini cut into strips
  • a handful of cherry tomatoes
  • about an inch and a half of cucumber, chopped
  • a small (70g)tin of tuna (In springwater, not oil)

and a dressing I made from:

  • 1 tsp apple cider vinegar
  • chilli flakes (To taste. I like my salads zingy, so I use about 1/2 a tsp)
  • 1 tsp dijon mustard
  • 1 tsp crushed garlic
  • 1 teaspoon of honey
  • and a squeeze of lime

All of which comes to about 160 calories (depending on the size of your veg)

It just tastes so GOOD!
