I’m loving these fresh, crunchy, filling salads. This one will take me to about 3pm I’m guessing.
It’s just:
- one carrot, cut into strips
- one zucchini cut into strips
- a handful of cherry tomatoes
- about an inch and a half of cucumber, chopped
- a small (70g)tin of tuna (In springwater, not oil)
and a dressing I made from:
- 1 tsp apple cider vinegar
- chilli flakes (To taste. I like my salads zingy, so I use about 1/2 a tsp)
- 1 tsp dijon mustard
- 1 tsp crushed garlic
- 1 teaspoon of honey
- and a squeeze of lime
All of which comes to about 160 calories (depending on the size of your veg)
It just tastes so GOOD!
